A Tale of Two Cows

Why milk that nourished people for millennia can cause distress today — the A1 vs. A2 story, read through both modern science and Ayurveda.

A1 vs. A2 Milk

As an Ayurvedic doctor, I have always been fascinated by the deep reverence for milk in classical Ayurvedic texts. Whether from cows, buffalo, or goats, milk has been described as a complete food, nourishing all seven dhatus (tissues) and serving as a cornerstone of rejuvenation therapies because of its ability to enhance bioavailability of herbs. Yet, in my clinical practice in the United States, I have repeatedly observed a different reality—one where milk is more often a source of digestive distress, inflammation, and imbalance rather than nourishment. This paradox puzzled me for years.

Logically, I attributed this to improper preparation. Perhaps the milk was not boiled correctly, over-pasteurized, or lacking the digestive-enhancing spices that Ayurveda recommends, such as cardamom, turmeric, or cinnamon. I even theorized that the Western diet, with its emphasis on meat and processed foods, created an excess of saturated fats in the body, increasing phlegm (Kapha) and triggering an overproduction of bile (Pitta), ultimately leading to liver and gallbladder dysfunction, and systemic inflammation.

But over time, both in my personal experience and my clinical observations, I stumbled upon a more compelling explanation: the type of milk available in the United States is fundamentally different from the milk traditionally consumed in places like India, parts of Europe and New Zealand. The primary difference lies in the genetic makeup of the cows themselves.

The Science of A1 vs. A2 Milk

Simply put, the difference between A1 and A2 milk comes down to a tiny variation in the protein structure of the milk.

Most milk in the U.S. comes from cows that produce A1 beta-casein protein, while traditional breeds in India, parts of Europe, and New Zealand predominantly produce A2 beta-casein. Research suggests that A1 beta-casein is broken down in the gut into a peptide called beta-casomorphin-7 (BCM-7), which has been implicated in inflammation, digestive issues, and even neurological effects. Some studies indicate that BCM-7 may contribute to gut permeability, often referred to as “leaky gut,” and has been linked to increased mucus production, respiratory issues, and dairy intolerance symptoms.

Conversely, A2 milk—produced by indigenous Indian cows such as Gir, Sahiwal, and Red Sindhi, as well as certain breeds in New Zealand—lacks this problematic peptide. Several studies have shown that A2 milk is easier to digest, with fewer reports of bloating, gas, and inflammatory responses compared to A1 milk. For many individuals who believe they are lactose intolerant, it turns out they may actually be reacting to the protein structure rather than lactose itself.

A2 Milk Through the Lens of Ayurveda

While cow’s milk is the most commonly discussed in this debate, Ayurveda also recognizes the benefits of goat and buffalo milk. Goat’s milk is considered lighter and easier to digest, making it a preferable option for those with weaker digestion or excess Kapha. It is often recommended for children and individuals with respiratory issues due to its lower mucous-forming properties. Buffalo milk, on the other hand, is heavier, more tamasic, and can be more difficult to digest, though it is nourishing for those who need grounding, such as Vata types. The type of milk one consumes should always be chosen based on individual constitution and digestive capacity.

Ayurveda categorizes foods based on their inherent qualities (gunas) and effects on the doshas. Traditional cow’s milk is considered sattvic, meaning it promotes clarity, nourishment, and balance. However, modern A1 milk, with its inflammatory potential, behaves more like a tamasic substance—dull, heavy, and disruptive to digestion.

A2 milk, on the other hand, aligns with the Ayurvedic understanding of milk as an ojas-building food. Ojas is the vital essence responsible for immunity, strength, and overall well-being. The absence of BCM-7 in A2 milk means it can be digested more harmoniously, reducing the likelihood of ama (toxins) accumulation in the gut.

Furthermore, Ayurveda always emphasized proper milk preparation. Boiling milk changes its molecular structure, making it easier to digest, while adding spices like turmeric and cardamom counteract its mucous-forming tendencies. However, if the foundational component—the milk itself—is inherently inflammatory, no amount of preparation can fully mitigate its effects.

Reintroducing Dairy with Awareness

Over the years, I have recommended A2 milk to my patients who struggle with dairy, and the results have been significant. Many who previously experienced bloating, congestion, or skin flare-ups found that A2 milk caused none of these issues. While it is not a universal solution—some individuals may still need to avoid dairy for other reasons—it offers an alternative that aligns more closely with Ayurveda’s original wisdom.

This entire discussion, of course, is anecdotal. But in Ayurveda, observation and experience are just as important as controlled trials. When a pattern emerges repeatedly—in my own body, in my patients, and in traditional cultures that have long thrived on dairy—it is worth paying attention to. Modern science is only now catching up to what Ayurveda has understood for millennia: not all milk is created equal, and sometimes, the difference is in the genes of the cows themselves.

If you love dairy but it doesn’t love you back, A2 milk might be worth a try. Sometimes, the answer isn’t giving up a food entirely—it’s finding the right version of it.

For those living in countries where A2 milk is commonly available, such as India, New Zealand, and Australia, finding it is as simple as picking it up at your local grocery store. However, in other countries like the United States and Canada, A2 milk can often be found at health food stores, organic markets, and even larger retailers such as Whole Foods and Sprouts. And although I prefer supporting my local co-ops and like-minded independently owned health food stores, mainstream supermarkets and big-box stores like Costco have begun carrying A2 dairy products, including A2 yogurt and milk, making it increasingly accessible for those looking to make the switch.

In the words of Margaret Mead, “Always remember, you are absolutely unique. Just like everyone else.” The same, it seems, applies to cows.
